JATIMTIMES - Momen Idul Adha identik dengan aneka olahan daging kurban, mulai dari sate, gulai, tongseng hingga sop kambing. Namun di balik kenikmatan itu, tak sedikit masyarakat yang khawatir mengalami kolesterol tinggi atau tekanan darah naik setelah menyantap hidangan khas Lebaran Haji.
Menteri Kesehatan RI Budi Gunadi Sadikin pun angkat bicara soal anggapan tersebut. Lewat konten Budi Gemar Sharing (BGS), ia menegaskan bahwa kambing bukan penyebab utama munculnya hipertensi maupun kolesterol tinggi saat Idul Adha.

Menurut Budi, persoalan justru terletak pada cara pengolahan daging yang sering berlebihan menggunakan santan, garam, gula, hingga tambahan jeroan. “Yang salah bukan si kambing. Yang salah adalah cara masaknya,” ujar Budi, dikutip Antara, Rabu (27/5/2026).
Ia menjelaskan, banyak masyarakat memasak daging kambing dengan santan kental dalam jumlah besar, lalu menambahkan jeroan serta bumbu tinggi garam dan gula. Kombinasi itulah yang akhirnya membuat hidangan menjadi kurang sehat jika dikonsumsi berlebihan.
“Si kambing sudah bener sehat, sama si tukang masak ditambahin tuh santannya sebanyak ini, ditambahin jeroan, ditambahin garam yang banyak, ditambahin juga gula yang banyak,” katanya.
Budi menyebut, bahan tambahan tersebut menjadi pemicu utama meningkatnya risiko hipertensi dan kolesterol usai menyantap makanan khas Idul Adha. Ia juga menyoroti kebiasaan masyarakat yang gemar mengonsumsi jeroan sebagai pelengkap gulai, sate, hingga tongseng.
Menurutnya, jeroan seperti hati, paru, dan usus memiliki kandungan kolesterol jauh lebih tinggi dibandingkan daging biasa.
“Pelaku utamanya adalah santan kental yang dimasak berjam-jam, serta jeroan seperti hati, paru, dan usus,” tulisnya.

Ia mengatakan, kadar kolesterol pada jeroan bahkan bisa mencapai tiga sampai lima kali lebih tinggi dibandingkan daging kambing biasa. Karena itu, banyak kasus tekanan darah naik hingga kolesterol tinggi selepas Idul Adha lebih dipicu pola konsumsi dan cara memasak.
“Kalau habis Iduladha banyak yang masuk RS karena hipertensi atau kolesterol, pastikan kita tahu bahwa pelakunya bukan kambingnya,” tambahnya.
Meski begitu, Budi mengingatkan masyarakat tak perlu takut menikmati daging kurban selama dikonsumsi secara wajar dan diolah dengan lebih sehat. Ia menyarankan agar penggunaan santan, gula, dan garam dikurangi, serta membatasi konsumsi jeroan.
