Viral Dirty Latte, Minuman Kopi yang Rasanya Mirip Es Krim Vanila: Begini Cara Bikinnya

JATIMTIMES – Dirty Latte tengah ramai menjadi perbincangan di media sosial. Minuman kopi ini viral karena tampilannya yang unik dengan lapisan espresso panas mengambang di atas susu dingin, serta sensasi rasanya yang disebut menyerupai es krim vanila.

Popularitas Dirty Latte semakin ramai setelah sejumlah barista dan kreator konten membagikan cara membuat hingga pengalaman mencicipinya. Salah satunya datang dari barista Fedro Alfisyahri, peraih juara ketiga Indonesia Ultimate Beverage Championship (IUBC) 2026, ajang bergengsi barista.

Melalui akun Instagram pribadinya, Fedro menjelaskan bahwa Dirty Latte bukan sekadar espresso yang dituangkan ke dalam susu dingin. Ada teknik khusus yang membuat rasa dan teksturnya berbeda dari latte biasa. "Pernah lihat espresso yang diolah mengambang di atas susu dingin? Nah, itu yang disebut Dirty Latte," ujar Fedro.

Dirty Latte sendiri merupakan minuman kopi yang memadukan espresso panas dengan susu dingin tanpa tambahan es batu. Espresso dituangkan perlahan sehingga membentuk lapisan yang tidak langsung bercampur dengan susu. Tampilan inilah yang membuat minuman tersebut dijuluki dirty atau "kotor".

Salah satu rahasia kelezatannya adalah penggunaan teknik freeze distilled milk atau susu hasil distilasi beku.

"Proses ini disebut Freezer Distilled Milk, yaitu teknik membekukan susu hingga benar-benar padat, lalu membalikannya di atas wadah saat proses pencairan berlangsung di dalam kulkas," jelas Fedro.

Menurutnya, lelehan pertama dari susu beku menghasilkan tekstur yang jauh lebih kaya. "Hasil lelehan pertama akan menghasilkan susu yang lebih kaya rasa dan teksturnya lebih creamy." ujarnya. 

Fedro menjelaskan, proses tersebut membuat kandungan gula dan protein lebih dahulu larut, sementara sebagian besar air tertinggal.

"Oke, jadi pada dasarnya kita membiarkan gula dan protein cepat larut terlebih dahulu, meninggalkan sebagian besar air di belakangnya dan entah bagaimana ini bisa seimbang dengan sempurna." jelas Fedro. 

"Proses ini menghasilkan tekstur yang lebih lembut dan rasa manis alami yang lebih terasa," lanjutnya.
Cara Membuat Dirty Latte

Fedro membagikan langkah sederhana membuat Dirty Latte ala kafe. 

Pertama, siapkan sekitar 120 ml susu hasil freeze distilled, kemudian tambahkan 10 ml sirup vanila.

Selanjutnya seduh espresso dengan rasio 1:1, lalu tuangkan langsung ke atas susu menggunakan gelas yang sudah didinginkan hingga sangat dingin.

"Setelah menambahkan sedikit 10 ml sirup vanila dan kita siapkan espresso dengan rasio 1: 1, bagian espresso dan 120 ml susu. Menuangkan langsung di atas susu hasil freeze distilled dalam gelas yang sangat dingin, menghasilkan Dirty Latte yang creamy, manis alami dan seimbang," kata Fedro.

Agar sensasi rasanya maksimal, Fedro menyarankan minuman langsung dinikmati. "Minumnya dalam tegukan besar agar mendapatkan susu yang dingin, espresso yang panas secara bersamaan. Rasanya seperti vanilla ice cream," pungkas Fedro. 

Pengalaman menarik juga dibagikan akun Instagram @dyodoran saat mencoba Dirty Latte di sebuah kedai kopi.

Dalam video tersebut cara bikin Dirty Latte juga unik, yakni gelas terlebih dahulu didinginkan menggunakan freezer bersuhu sekitar -86 derajat Celsius sebelum diisi susu dan espresso.

Barista di kedai itu bahkan memberikan pesan khusus sebelum minuman dinikmati. "Langsung diminum jangan lewat dari 40 detik ya, karena ngilangin experience-nya. Jadi nanti kakaknya dapat gelato ketika di tengah (gelas)," ujar barista.

Saat menyeruput pertama kali, pemilik akun mengaku langsung merasakan tekstur yang berbeda. "Sensasi creamy-creamy-nya dapat banget tapi sensasi di bibir itu kayak nempel di es," ungkapnya.

Menariknya, setelah diaduk hingga seluruh lapisan menyatu, rasa minuman justru menurutnya semakin nikmat. "Enak banget ternyata, wah," katanya.
