JATIMTIMES - Asap dari tungku perebus kedelai masih mengepul sejak pagi di rumah-rumah produksi tempe di Desa Beji, Kecamatan Junrejo, Kota Batu. Aktivitas para perajin nyaris tak berubah. Kedelai dicuci, direbus, difermentasi hingga siap dipasarkan ke berbagai wilayah di Malang Raya.
Namun di balik rutinitas tersebut, para pelaku usaha rumahan kini menghadapi tantangan yang semakin berat. Lonjakan harga kedelai impor membuat biaya produksi terus meningkat, sementara permintaan pasar mengharuskan mereka tetap berproduksi setiap hari.

Kepala Desa Beji, Deny Cahyono, mengatakan hampir seluruh produsen tempe di desanya masih bergantung pada kedelai impor karena kualitas dan pasokannya dinilai lebih sesuai dibanding kedelai lokal.
“Seluruh kebutuhan bahan baku masih mengandalkan kedelai impor. Saat nilai tukar dolar naik, harga kedelai otomatis ikut terkerek. Dulu kisaran Rp 9 ribu sampai Rp 10 ribu per kilogram, sekarang sudah sekitar Rp 12 ribu per kilogram,” kata Deny, Jumat (10/7/2026).
Bergantungnya terhadap kedelai impor tidak bisa dihindari. Selain kualitas kedelai lokal belum memenuhi standar produksi tempe, volumenya juga belum mampu memenuhi kebutuhan industri rumahan di Desa Beji.
Setiap hari, sentra tempe di desa tersebut sedikitnya membutuhkan sekitar enam ton kedelai untuk memenuhi produksi tahu dan tempe. Kemudian hasil produksi ini dipasarkan ke berbagai daerah.
“Kebutuhan kami setiap hari tidak kurang dari enam ton. Kalau mengandalkan kedelai lokal, jumlahnya tidak mencukupi, sementara kualitasnya juga belum cocok untuk produksi tempe,” imbuhnya.
Kenaikan harga bahan baku akhirnya memaksa para perajin melakukan penyesuaian harga jual. Satu kotak tempe yang diproduksi dari satu kilogram kedelai kini dijual sekitar Rp 30 ribu, naik dibanding sebelumnya yang berada di kisaran Rp 20 ribu.
Meski demikian, kenaikan harga tersebut belum sepenuhnya mampu menutup lonjakan biaya produksi. Selain kedelai, biaya transportasi, gas elpiji, hingga kemasan plastik juga ikut meningkat.
“Bukan hanya kedelainya yang naik. Ongkos distribusi, gas untuk merebus, sampai plastik kemasan juga ikut naik. Jadi sebenarnya keuntungan perajin justru semakin tipis,” jelasnya.

Ia menambahkan, kenaikan harga bahan bakar non-subsidi juga memberikan efek berantai terhadap biaya operasional para produsen tempe. Di tengah tekanan biaya tersebut, permintaan pasar terhadap tempe Beji masih tergolong stabil.
Produk mereka setiap hari dipasarkan ke sejumlah pasar tradisional di Malang Raya, mulai Pasar Among Tani Kota Batu, Pasar Karangploso, Pasar Blimbing, Pasar Gadang, hingga wilayah Pujon, Ngantang dan Kasembon.
“Permintaannya masih stabil. Tempe sudah menjadi salah satu lauk yang hampir selalu dikonsumsi masyarakat, sehingga pasar kami masih tetap berjalan,” ucap Deny.
Kenaikan biaya produksi juga berdampak pada produk olahan lainnya, seperti keripik tempe. Harga jual yang sebelumnya sekitar Rp 60 ribu per kilogram kini naik menjadi Rp 70 ribu per kilogram mengikuti meningkatnya harga minyak goreng dan bahan penunjang lainnya.
Meski menghadapi berbagai tantangan, para pelaku usaha di Desa Beji memilih tetap mempertahankan produksi. Berbagai inovasi dilakukan, mulai dari pengembangan variasi produk hingga pembaruan kemasan agar tetap mampu bersaing di pasar.
“Tempe sudah menjadi penggerak ekonomi masyarakat Beji. Harapan kami ada solusi jangka panjang agar harga kedelai lebih stabil sehingga usaha kecil seperti kami bisa terus bertahan,” tutup Deny.
